Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3.4 cup unsweetened cocoa powder
  • 2.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 8 ounces cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 0.5 cup unsweetened cocoa powder (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 2 tablespoons heavy cream

Directions

Step 1

Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and lining them with parchment paper.

Step 2

In a large mixing bowl, combine the flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until well combined.

Step 3

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until smooth using a handheld or stand mixer on medium speed.

Step 4

Gradually stir in the boiling water. The batter will be thin, but this is normal. Mix until just combined.

Step 5

Divide the batter evenly between the prepared cake pans. Tap the pans lightly on the counter to remove any air bubbles.

Step 6

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Step 7

To make the frosting, beat the softened cream cheese and butter together in a large bowl until smooth and creamy.

Step 8

Add the powdered sugar and cocoa powder to the cream cheese mixture 1 cup at a time, mixing on low speed until fully incorporated.

Step 9

Stir in the vanilla extract and heavy cream, then increase the mixer speed to medium-high and beat the frosting until light and fluffy.

Step 10

Once the cakes are completely cooled, level the tops with a serrated knife if necessary.

Step 11

Place one cake layer on a serving plate or cake stand. Spread a thick, even layer of frosting on top.

Step 12

Add the second cake layer on top and spread a thin crumb coat over the entire cake. Refrigerate for 20 minutes.

Step 13

Remove from the fridge and spread the remaining frosting evenly over the top and sides of the cake.

Step 14

Decorate as desired (optional), then slice and serve. Enjoy your chocolate layer cake with chocolate cream cheese frosting!
