Ingredients

  • 60 grams All-purpose flour
  • 20 grams Unsweetened cocoa powder
  • 15 grams Cornstarch
  • 3 large Eggs, separated
  • 70 grams Granulated sugar (divided)
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, sift together the flour, cocoa powder, and cornstarch. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to beat the egg yolks and 35 grams of the sugar until thick, pale, and ribbon-like (about 3-4 minutes). Mix in the vanilla extract.

In a separate clean mixing bowl, beat the egg whites until frothy. Gradually add the remaining 35 grams of sugar and beat until stiff peaks form.
