Ingredients

  • 45 grams unsalted butter
  • 4 pieces large eggs, separated
  • 50 grams granulated sugar
  • 250 ml heavy cream
  • 60 ml Kahlua liquor
  • 1 teaspoon vanilla extract
  • 1 pinch pinch of salt
  • 10 grams dark chocolate shavings (for garnish)
  • 50 grams whipped cream (for garnish)

Directions

Step 1

In a heatproof bowl set over a pot of simmering water, melt the semi-sweet chocolate chips and unsalted butter. Stir until smooth and fully combined, then remove the bowl from heat and set aside to cool slightly.

Step 2

In a medium bowl, whisk together the egg yolks, Kahlua, and vanilla extract until smooth. Gradually stir this mixture into the melted chocolate until well blended.

Step 3

In a clean mixing bowl, whip the egg whites with a pinch of salt until soft peaks form. Gradually add the granulated sugar, a little at a time, and continue whipping until stiff peaks form.
