Ingredients

  • 1.5 cups All-purpose flour
  • 0.75 cup Unsweetened cocoa powder
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 0.5 cup Unsweetened applesauce
  • 0.25 cup Vegetable oil
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1 cup Milk
  • 0.75 cup Granulated erythritol (sugar substitute)
  • 0.5 cup Boiling water

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour a 9-inch round cake pan and set it aside.

Step 2

In a large mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.

Step 3

In another mixing bowl, combine the unsweetened applesauce, vegetable oil, and eggs. Whisk until smooth and well blended.

Step 4

Add the vanilla extract, milk, and granulated erythritol to the wet mixture, and mix until the sweetener is fully dissolved.

Step 5

Gradually add the wet ingredients to the bowl of dry ingredients, stirring gently until combined and no lumps remain. Do not overmix.

Step 6

Slowly pour in the boiling water, a little at a time, stirring constantly. The batter will become thin, but this is normal.

Step 7

Pour the batter into the prepared cake pan, spreading it evenly.

Step 8

Bake in the preheated oven for 30–35 minutes or until a toothpick inserted into the center comes out clean.

Step 9

Remove the cake from the oven and allow it to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 10

Optionally, frost with a sugar-free chocolate ganache or enjoy as is!
