Ingredients

  • 100 grams Granulated sugar
  • 300 ml Heavy cream

  • 50 grams Hazelnuts, toasted and finely chopped
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt

Directions

Step 1

Line a 9x5-inch (23x13 cm) loaf pan with plastic wrap, leaving enough overhang on the edges to later cover the semifreddo.

Step 2

Set up a double boiler by filling a saucepan with a few inches of water and bringing it to a simmer. Place a heatproof bowl over the saucepan, ensuring the bottom doesn't touch the water.

In the heatproof bowl, whisk together the egg yolks and sugar until well combined. Place the bowl over the simmering water and whisk constantly for about 5-7 minutes, until the mixture is pale, thick, and ribbons form when drizzled from the whisk. Remove from heat and allow to cool slightly.
