Ingredients

  • 250 ml Guinness stout beer
  • 250 grams unsalted butter
  • 75 grams unsweetened cocoa powder
  • 400 grams granulated sugar
  • 140 ml sour cream
  • 2 pieces large eggs
  • 1 teaspoon vanilla extract
  • 275 grams all-purpose flour
  • 2.5 teaspoons baking soda
  • 200 grams cream cheese
  • 150 grams powdered sugar
  • 125 ml heavy cream

Directions

Step 1

Preheat your oven to 180°C (356°F) and grease a 9-inch (23cm) springform cake pan. Line the bottom with parchment paper.

Step 2

In a medium saucepan, heat the Guinness and butter over medium-low heat until the butter has melted. Remove from heat.

Step 3

Whisk in the cocoa powder and sugar until smooth, then set aside to cool slightly.

Step 4

In a large bowl, whisk together the sour cream, eggs, and vanilla extract until combined.

Step 5

Gradually add the slightly cooled Guinness mixture to the sour cream mixture, whisking until smooth.

Sift the flour and baking soda into the wet mixture and gently fold with a spatula until no lumps remain. Do not overmix.
