Ingredients

  • 250 grams dark chocolate (70% cocoa)
  • 200 grams unsalted butter
  • 50 grams crystallized ginger
  • 1 teaspoon ground ginger
  • 4 large eggs
  • 150 grams caster sugar
  • 50 grams plain flour
  • 1 tablespoon cocoa powder
  • 0.25 teaspoon salt

Directions

Step 1

Preheat the oven to 170°C (340°F) and grease a 20 cm (8-inch) springform pan. Line the base with parchment paper.

Step 2

Chop the dark chocolate into small pieces and dice the unsalted butter. Place both in a heatproof bowl and set the bowl over a saucepan of gently simmering water. Stir until melted and smooth. Remove from heat and let cool slightly.

Finely chop the crystallized ginger and set aside.
