Ingredients

  • 170 grams Unsalted butter
  • 225 grams Dark chocolate (70% cocoa or higher)
  • 200 grams Granulated sugar
  • 4 Large eggs
  • 30 grams Cocoa powder (unsweetened)
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 2 tablespoons Powdered sugar (optional, for dusting)

Directions

Step 1

Preheat the oven to 175°C (350°F) and grease a 20 cm (8-inch) round cake pan with butter or non-stick spray. Line the bottom with parchment paper for easy release.

Step 2

Cut the butter and dark chocolate into small pieces and place them in a heatproof bowl. Set the bowl over a pot of gently simmering water (make sure the base of the bowl does not touch the water) and melt the butter and chocolate together, stirring until smooth. Remove from heat and let cool slightly.

Step 3

In a large mixing bowl, whisk the eggs and granulated sugar together until pale and frothy. This should take about 2 minutes of vigorous whisking.

Gradually add the melted chocolate mixture to the egg-sugar mixture, whisking continuously to combine. Be careful not to cook the eggs.

Sift in the cocoa powder and add the vanilla extract and salt. Gently fold the mixture together with a spatula until smooth and well incorporated.

Pour the batter into the prepared cake pan and spread evenly.

Remove the cake from the oven and let it cool in the pan for 10 minutes, then carefully invert it onto a wire rack to cool completely.

Once cooled, dust the top with powdered sugar if desired. Slice and serve as-is or with whipped cream or fresh berries.
