Ingredients

  • 200 g Rolled oats
  • 100 g Unsalted butter
  • 75 g Brown sugar
  • 2 tbsp Golden syrup
  • 100 g Dark chocolate chips
  • 300 g Frozen cherries
  • 1 tbsp Lemon juice
  • 2 tbsp Granulated sugar
  • 1 tsp Cornstarch
  • 2 tbsp Water

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a 20cm (8-inch) square baking tin with parchment paper.

Step 2

In a saucepan over low heat, melt the unsalted butter, brown sugar, and golden syrup together, stirring occasionally, until smooth and combined.

Step 3

Remove the saucepan from the heat and stir in the rolled oats and dark chocolate chips until evenly coated.

Step 4

Press the mixture evenly into the prepared baking tin using the back of a spoon. Bake in the preheated oven for 20–25 minutes, or until the edges are lightly golden.

While the flapjacks are baking, prepare the warm cherry syrup. In a medium saucepan, combine the frozen cherries, lemon juice, and granulated sugar. Cook over medium heat, stirring occasionally, until the cherries release their juices and start to soften, about 5–7 minutes.

In a small bowl, mix the cornstarch with water to create a slurry. Add this to the cherry mixture and cook for another 2–3 minutes, stirring constantly, until the syrup thickens slightly. Remove from heat and keep warm.

Once the flapjacks are baked, allow them to cool in the tin for 10 minutes before transferring them to a wire rack to cool completely. Cut into squares or rectangles.
