Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cups unsweetened cocoa powder
  • 1 cup granulated sugar
  • 0.5 cups brown sugar, packed
  • 1 teaspoon baking powder
  • 0.5 teaspoons baking soda
  • 0.5 teaspoons salt
  • 0.75 cups buttermilk, room temperature
  • 0.25 cups vegetable oil
  • 2 units large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 0.5 cups hot water
  • 12 units peanut butter cups (mini or regular size)
  • 1.5 cups chocolate frosting (homemade or store-bought)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

Step 2

In a large mixing bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt until well combined.

Step 3

In a separate medium bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.

Step 4

Gradually mix the wet ingredients into the dry ingredients, stirring until just combined.

Step 5

Add the hot water to the batter and stir until smooth. The batter will be thin; this is normal.

Step 6

Fill each cupcake liner about 2/3 full with the batter.

Step 7

Place one peanut butter cup into the center of each cupcake, gently pressing it down until it is covered by the batter.

Step 8

Bake in the preheated oven for 16-18 minutes, or until a toothpick inserted into the edge of a cupcake (avoid the peanut butter cup center) comes out clean.

Step 9

Remove the cupcakes from the oven and let them cool in the pan for 10 minutes, then transfer them to a wire rack to cool completely.

Step 10

Once the cupcakes have cooled, frost them with chocolate frosting using a piping bag or a spatula.

Step 11

Optional: Garnish with additional chopped peanut butter cups or chocolate sprinkles for decoration.

Step 12

Serve and enjoy these decadent chocolate peanut butter cupcakes!
