Preheat your oven to 325°F (165°C).
In a medium saucepan, heat the heavy cream over medium heat until it just starts to steam. Do not let it boil.
Remove the cream from heat and stir in the semi-sweet chocolate until it is completely melted and smooth. Set aside to cool slightly.
In a medium bowl, whisk together the egg yolks and 4 tablespoons of granulated sugar until thick and pale, about 1–2 minutes.
Gradually whisk the slightly cooled chocolate mixture into the egg yolk mixture. Stir in the vanilla extract.
Place 4 small ramekins in a deep baking dish. Divide the creme brulee mixture evenly among the ramekins.
Pour hot water into the baking dish until it reaches halfway up the sides of the ramekins, creating a water bath.
Carefully place the baking dish in the oven and bake for 30–35 minutes, or until the centers of the creme brulees are just set but still slightly jiggly.
Remove the ramekins from the water bath and let them cool to room temperature. Cover and refrigerate for at least 3 hours or up to overnight.
Before serving, crush the graham crackers into fine crumbs and set aside.
Sprinkle 1 teaspoon of brown sugar evenly over the top of each creme brulee. Use a kitchen torch to caramelize the sugar until it has melted and formed a brittle crust. Let cool for 1–2 minutes.
Top each creme brulee with a layer of crushed graham crackers. Place 2 marshmallows on top of each dessert.
Using a kitchen torch, toast the marshmallows until golden brown and slightly melted. Serve immediately for a gooey, s'mores-inspired treat.
