Ingredients

  • 113 grams Unsalted butter
  • 150 grams Brown sugar
  • 50 grams Granulated sugar
  • 1 Large egg
  • 2 teaspoons Vanilla extract
  • 125 grams All-purpose flour
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 0.5 teaspoons Ground cinnamon
  • 150 grams Rolled oats
  • 100 grams Dried cranberries
  • 100 grams Semi-sweet chocolate chips

Directions

Step 1

Preheat your oven to 175°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.

Step 3

Beat in the egg and vanilla extract until well combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.

Step 5

Gradually add the dry ingredients to the wet mixture, mixing until just combined.

Step 6

Stir in the rolled oats, dried cranberries, and semi-sweet chocolate chips until evenly distributed.

Step 7

Scoop tablespoon-sized amounts of dough and roll them into balls. Place them on the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Gently press down on each ball to slightly flatten.

Step 9

Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. The centers may look slightly underdone but will firm up as they cool.

Step 10

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Once cooled, enjoy your Chocolate Cranberry Oat Cookies with a glass of milk or your favorite hot drink.
