Ingredients

  • 2 cups Raisins
  • 1.5 cups Semi-sweet chocolate chips
  • 1 tablespoon Coconut oil

Directions

Step 1

Line a baking sheet with parchment paper or a silicone baking mat. Set aside.

Place the semi-sweet chocolate chips and coconut oil in a heatproof bowl.

Melt the chocolate mixture by microwaving in 20–30 second intervals, stirring well after each interval, until smooth and fully melted. Alternatively, use a double boiler to melt the chocolate over low heat.

Once the chocolate is melted, add the raisins to the bowl and stir until they are completely coated in chocolate.

Using a fork or small slotted spoon, remove small clusters of chocolate-coated raisins, letting the excess chocolate drip off, and place them on the prepared baking sheet in small mounds.

Repeat until all the chocolate-coated raisins have been transferred to the baking sheet.
