Ingredients

  • 200 grams dark chocolate (70% or higher)
  • 100 grams unsalted butter
  • 1 tablespoon instant coffee granules
  • 2 tablespoons hot water
  • 125 grams granulated sugar
  • 3 large eggs
  • 75 grams all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • 0.5 teaspoon salt
  • 2 tablespoons powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and line the bottom of a 9-inch round cake pan with parchment paper.

Step 2

In a medium heatproof bowl, combine the dark chocolate and butter. Melt them together over a saucepan of gently simmering water (double boiler method), stirring occasionally until smooth. Remove from heat.

In a small bowl, dissolve the instant coffee granules in hot water. Stir this coffee mixture into the melted chocolate and set aside.

In a separate large mixing bowl, whisk the granulated sugar and eggs together until the mixture thickens and turns pale, about 2-3 minutes.
