Ingredients

  • 150 g unsalted butter
  • 100 g granulated sugar
  • 30 g unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 75 g desiccated coconut
  • 250 g crushed digestive biscuits (or graham crackers)
  • 200 g dark chocolate
  • 50 ml heavy cream
  • 15 g additional desiccated coconut for topping (optional)

Directions

Step 1

Line a 20cm x 20cm (8-inch x 8-inch) square baking pan with parchment paper, allowing the edges to hang over for easy removal.

Step 2

In a medium saucepan over low heat, melt the butter. Once melted, stir in the granulated sugar and cocoa powder until smooth and well combined.

Step 3

Remove the saucepan from the heat and stir in the vanilla extract.

Step 4

Add the desiccated coconut and crushed digestive biscuits to the saucepan. Mix until all ingredients are evenly coated with the chocolate mixture.

Press the mixture firmly and evenly into the prepared baking pan, creating a compact base. Use the back of a spoon or a spatula to smooth the surface.
