Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a medium bowl, mix together the shredded coconut, chocolate chips, powdered sugar, vanilla extract, honey, and salt. Stir until well combined.
Melt the butter in a small saucepan or in the microwave. Set aside.
Lay one sheet of phyllo dough on a clean, flat surface. Cover the remaining sheets with a damp kitchen towel to prevent them from drying out.
Lightly brush the phyllo sheet with melted butter using a pastry brush, then place another sheet of phyllo dough over it. Brush this layer with butter as well.
Using a sharp knife or pizza cutter, slice the phyllo stack into 3-4 strips lengthwise, approximately 3 inches wide.
