In a large mixing bowl, combine 200 grams of desiccated coconut with 200 milliliters of sweetened condensed milk. Mix until well blended and sticky.
Add 3 tablespoons of cocoa powder and 1 teaspoon of vanilla extract to the coconut mixture. Stir until the ingredients are thoroughly combined and the mixture looks uniform in color.
Use your hands to scoop small portions of the mixture and roll them into balls, approximately 1 inch in diameter. You should be able to make about 20 balls.
Place the formed balls on a baking tray lined with parchment paper. Allow them to chill in the refrigerator for about 30 minutes to firm up.
Meanwhile, melt 200 grams of dark chocolate and 1 tablespoon of butter together in a heatproof bowl over a pot of simmering water, stirring until smooth. Alternatively, you can use a microwave, heating in 30-second intervals and stirring in between.
Once the chocolate is melted and smooth, remove it from the heat.
Take the chilled coconut balls from the refrigerator. Using a fork, dip each ball into the melted chocolate, ensuring it's completely coated, and then place it back onto the parchment paper.
Immediately sprinkle a little of the extra desiccated coconut on each chocolate-coated ball before the chocolate sets.
Once all the balls are coated, return the tray to the refrigerator for about 30 minutes or until the chocolate has set completely.
Serve chilled as a delicious sweet treat. Store any leftovers in an airtight container in the refrigerator for up to one week.
