Ingredients

  • 300 grams Chocolate sandwich cookies
  • 400 ml Heavy cream
  • 200 grams Dark chocolate (70% cocoa)
  • 50 grams Powdered sugar
  • 1 teaspoon Vanilla extract
  • 30 grams Unsalted butter
  • 1 tablespoon Cocoa powder
  • 1 as needed Edible decorations (optional: e.g., holly leaves, berries, powdered sugar for snow)

Directions

Step 1

Prepare the ganache by heating 300 ml of heavy cream in a medium saucepan over medium heat until it just begins to simmer. Remove from heat.

Step 2

Add the chopped dark chocolate to the hot cream and let it sit for 2 minutes. Then whisk until smooth. Stir in the butter and 1 teaspoon of vanilla extract, mixing until fully incorporated. Set aside to cool slightly.

Step 3

In a separate bowl, use an electric mixer to whip the remaining 100 ml of heavy cream with powdered sugar until soft peaks form. Set this whipped cream aside for later.

Step 4

Line a clean work surface with parchment paper. Spread a small dollop of ganache in the center of your serving platter to anchor the log.

Step 5

Spread 1 tablespoon of ganache onto one chocolate sandwich cookie, then stack another cookie on top, creating a sandwich. Continue repeating this process, layering cookies and ganache, until all cookies are used and you have a long log shape.

Step 6

Once the log is assembled, gently tip it onto its side so the cookies lay horizontally (the stacked edges will appear as rings when sliced). Cover the entire log with the remaining ganache, smoothing it all over to create an even coating.

Step 7

Use a fork to create a bark-like texture by gently running it across the ganache coating. Optional: slice off a small piece at an angle and attach it to the side of the log with ganache to mimic a branch.

Step 8

Place the log in the refrigerator to chill for at least 2-3 hours, or until set.

Step 9

Dust the chilled log lightly with cocoa powder and, if desired, decorate with edible holly leaves, berries, or a sprinkle of powdered sugar to resemble snow.

Step 10

Slice and serve this Chocolate Christmas Log Cookie Cake chilled or at room temperature.
