Ingredients

  • 113 grams unsalted butter
  • 170 grams semi-sweet chocolate chips
  • 150 grams granulated sugar
  • 3 units large eggs
  • 1 teaspoon vanilla extract
  • 65 grams all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 240 ml heavy cream (for mousse)
  • 2 teaspoons powdered gelatin
  • 2 tablespoons cold water
  • 170 grams semi-sweet chocolate (chopped, for mousse)
  • 120 ml heavy cream (for ganache)
  • 120 grams semi-sweet chocolate (chopped, for ganache)

Directions

Step 1

Preheat the oven to 175°C (350°F). Grease and line the bottom of a 9-inch springform pan with parchment paper.

Step 2

In a microwave-safe bowl, melt the butter and chocolate chips in 30-second intervals, stirring until smooth and combined. Let cool slightly.

Step 3

Whisk in the granulated sugar, followed by the eggs, one at a time. Stir in the vanilla extract.

Sift the flour and cocoa powder into the mixture and gently fold to combine. Pour the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Allow to cool completely in the pan.

In a separate bowl, whip the remaining 120 ml of heavy cream until medium peaks form. Gently fold the whipped cream into the cooled chocolate mixture in batches. Pour the mousse over the cooled cake base in the springform pan, smoothing the top with a spatula. Refrigerate for at least 4 hours or until set.

To prepare the ganache, heat the heavy cream (for ganache) in a small saucepan until it just begins to simmer. Place the chopped chocolate for ganache in a heatproof bowl and pour the hot cream over it. Let sit for 1-2 minutes, then stir until smooth and glossy.

Step 10

Carefully pour the ganache over the set mousse layer, spreading it to the edges. Refrigerate the torte for at least 1 hour to allow the ganache to set.
