Ingredients

  • 1.5 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1.5 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 1.25 cups Milk
  • 1 unit Large egg
  • 3 tablespoons Unsalted butter, melted and cooled
  • 1 teaspoon Vanilla extract
  • 0.5 cups Semi-sweet chocolate chips
  • 1 cup Heavy whipping cream
  • 2 tablespoons Powdered sugar
  • 0.5 teaspoons Ground cinnamon

Directions

Step 1

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt.

Step 2

In a medium bowl, combine the milk, egg, melted butter, and vanilla extract. Whisk until smooth.

Step 3

Pour the wet ingredients into the bowl of dry ingredients and stir just until combined. Do not overmix; the batter should have small lumps.

Step 4

Gently fold in the chocolate chips.

Step 5

Preheat a non-stick skillet or griddle over medium heat. Lightly grease the surface with cooking spray or a small amount of butter.

Step 6

Scoop approximately 1/4 cup of pancake batter onto the heated skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Step 7

Flip the pancakes and cook the other side until golden brown, about 1-2 minutes more. Transfer cooked pancakes to a plate and cover to keep warm. Repeat with the remaining batter.

Step 8

To make the cinnamon cream, beat the heavy cream, powdered sugar, and ground cinnamon in a mixing bowl using an electric mixer on high speed until stiff peaks form. This should take about 2-3 minutes.

Step 9

Serve the pancakes stacked on plates and dollop the cinnamon cream on top. Optionally, garnish with extra chocolate chips or a drizzle of maple syrup.
