  • 3 tablespoons Unsweetened cocoa powder
  • 100 grams Dark chocolate (70% cocoa), finely chopped
  • 1 teaspoon Vanilla extract

Directions

Step 1

Wash and pit the fresh sweet cherries, then roughly chop them.

Step 2

In a medium saucepan, combine the cherries, granulated sugar, lemon juice, and water.

Step 3

Place the saucepan over medium heat and stir to dissolve the sugar. Bring the mixture to a gentle boil.

Step 4

Reduce the heat to low and let the mixture simmer for 20–25 minutes, stirring occasionally, until the cherries release their juices and soften.

Use an immersion blender (or transfer the mixture carefully to a blender) to blend the cherries into a smoother texture, leaving some chunks if a rustic jam is preferred.
