Ingredients

  • 250 grams Dark chocolate
  • 200 grams Cream cheese (softened)
  • 50 grams Powdered sugar
  • 1 teaspoon Vanilla extract
  • 100 milliliters Whipping cream
  • 50 grams Graham cracker crumbs

Directions

Step 1

Melt the dark chocolate either in a microwave in 30-second increments, stirring each time, or over a double boiler until smooth and glossy.

Step 2

Using a small spoon or pastry brush, coat the insides of 8 silicone cupcake molds or a cupcake tin lined with paper liners with melted chocolate. Apply an even layer.

Step 3

Place the molds or tin into the refrigerator for 10 minutes to allow the chocolate to harden. Repeat with a second layer of chocolate to ensure durability and return to the refrigerator.

Step 4

In a large mixing bowl, beat the softened cream cheese and powdered sugar together using a hand or stand mixer until smooth and creamy.

Step 5

Add the vanilla extract and whipping cream to the cream cheese mixture and continue to beat until the mixture is fluffy and well combined.

Step 6

Remove the chocolate cups from the refrigerator and carefully spoon or pipe the cheesecake mixture into each cup, filling nearly to the top.

Step 7

Sprinkle graham cracker crumbs evenly over the top of each filled cup for added texture and flavor.

Step 8

Chill the filled chocolate cheese cups in the refrigerator for at least 1 hour to set fully before serving.

Step 9

Gently remove each chocolate cup from its mold or liner, serve chilled, and enjoy!
