Ingredients

  • 150 grams All-purpose flour
  • 30 grams Unsweetened cocoa powder
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 180 grams Granulated sugar
  • 4 Large eggs
  • 120 milliliters Whole milk
  • 80 grams Unsalted butter, melted
  • 1 teaspoon Vanilla extract
  • 450 grams Ricotta cheese
  • 100 grams Powdered sugar
  • 120 grams Dark chocolate, melted
  • 100 grams Mini chocolate chips
  • 200 milliliters Heavy cream
  • 200 grams Dark chocolate (for ganache)

Directions

Step 1

Preheat your oven to 175°C (350°F). Grease and line a round 9-inch cake pan with parchment paper.

Step 2

In a bowl, whisk together the flour, cocoa powder, baking powder, and salt.

In another large bowl, beat the sugar and eggs with an electric mixer until pale and fluffy, about 3 minutes.

Gradually add the milk, melted butter, and vanilla extract to the egg mixture while mixing at low speed.

Slowly fold in the dry ingredients until just combined. Pour the batter into the prepared pan.

Bake for 20–25 minutes or until a toothpick inserted into the center of the cake comes out clean. Let the cake cool completely, then slice it horizontally into two even layers.
