Ingredients

  • 200 grams Raw macadamia nuts
  • 100 grams Granulated sugar
  • 20 grams Unsalted butter
  • 0.5 teaspoons Sea salt
  • 150 grams Dark chocolate (70% cocoa or higher), finely chopped
  • 1 teaspoons Vegetable oil

Directions

Step 1

Preheat your oven to 170°C (340°F). Spread the macadamia nuts on a baking sheet and roast for 8-10 minutes, or until they are aromatic and lightly golden. Remove from the oven and set aside to cool slightly.

Step 2

In a heavy-bottomed saucepan over medium heat, combine the granulated sugar and butter. Stir gently until the sugar melts completely and turns into a golden caramel.

Step 3

Add the roasted macadamia nuts to the caramel, and quickly stir to coat them evenly. Sprinkle with sea salt and transfer the coated nuts onto a parchment-lined baking sheet. Separate the nuts with a fork to prevent clumping, and let them cool and harden completely.

Step 4

Once the caramel-coated nuts have cooled, melt the dark chocolate in a heatproof bowl set over a pot of simmering water (double-boiler method). Stir occasionally until smooth. Add the vegetable oil and mix well for a shiny finish.

Step 5

Using a fork or skewer, dip each caramelized macadamia nut into the melted chocolate, ensuring it is fully coated. Place the coated nuts back onto the parchment-lined baking sheet.

Step 6

Allow the chocolate to set at room temperature or in the refrigerator for about 20-30 minutes.

Step 7

Once the chocolate has hardened, transfer the Chocolate Caramelized Macadamia Nuts to an airtight container. Store at room temperature for up to 2 weeks and enjoy!
