Ingredients

  • 2 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 3 tablespoons Cocoa powder
  • 3 tablespoons Unsalted butter
  • 0.25 teaspoons Salt
  • 1 pieces Egg yolk
  • 0.5 cups White wine
  • 4 cups Vegetable oil
  • 1.5 cups Ricotta cheese
  • 0.75 cups Powdered sugar
  • 0.5 cups Mini semi-sweet chocolate chips
  • 1 teaspoons Vanilla extract
  • 0.5 cups Dark chocolate (melted for dipping, optional)
  • 2 tablespoons Powdered sugar (for garnish)

Directions

Step 1

In a large bowl, whisk together flour, granulated sugar, cocoa powder, and salt.

Step 2

Cut in the butter using a fork or your fingers until the mixture resembles coarse crumbs.

Step 3

Add the egg yolk and white wine to the dry ingredients. Mix until the dough begins to come together.

Step 4

Knead the dough on a lightly floured surface for 3-4 minutes until smooth. Wrap in plastic wrap and refrigerate for at least 30 minutes.

Meanwhile, in a medium bowl, combine ricotta cheese, powdered sugar, mini chocolate chips, and vanilla extract. Stir until smooth. Cover and refrigerate until ready to use.

Divide the chilled dough into two portions. Roll one portion out on a lightly floured surface to about 1/8-inch thickness.

Cut out circles using a 4-inch round cookie cutter. Wrap each circle around a metal cannoli form, sealing the edges with a bit of water.

Heat the vegetable oil in a deep pot to 350°F (175°C). Fry the cannoli shells in batches until crispy and golden brown, about 1-2 minutes per shell. Remove and drain on paper towels. Allow to cool before removing the forms.

Fill a piping bag fitted with a large round tip with the ricotta filling. Pipe the filling into each cooled cannoli shell from both ends.
