Ingredients

  • 0.5 cups Unsweetened cocoa powder
  • 1 cups All-purpose flour
  • 1 cups Granulated sugar
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.5 cups Whole milk
  • 0.25 cups Unsalted butter (melted)
  • 1 teaspoons Vanilla extract
  • 0.75 cups Brown sugar
  • 1.25 cups Boiling water
  • 0.5 cups Semisweet chocolate chips
  • 0 Whipped cream or vanilla ice cream (optional for serving)

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x9-inch baking dish with butter or non-stick spray.

Step 2

In a medium mixing bowl, whisk together the unsweetened cocoa powder, all-purpose flour, granulated sugar, baking powder, and salt until well combined.

Step 3

Pour in the whole milk, melted butter, and vanilla extract. Stir until the batter is smooth and lump-free.

Step 4

Spread the batter evenly into the prepared baking dish using a spatula.

Step 5

In another bowl, mix the brown sugar and an additional 2 tablespoons of cocoa powder. Sprinkle this mixture evenly over the chocolate batter in the dish.

Step 6

Pour the boiling water evenly over the top of the mixture. Do not stir! The water will soak through the layers and create the pudding texture as it bakes.

Step 7

Sprinkle the semisweet chocolate chips on top of the batter.

Step 8

Carefully transfer the baking dish to the preheated oven and bake for 35 minutes or until the top is set and slightly springy. The bottom will be gooey, forming the pudding layer.

Step 9

Remove from the oven and allow the cake pudding to cool for 5–10 minutes. The pudding layer will thicken slightly as it cools.

Step 10

Serve warm with whipped cream or a scoop of vanilla ice cream, if desired.
