Ingredients

  • 200 g All-purpose flour
  • 50 g Unsweetened cocoa powder
  • 250 g Granulated sugar
  • 1.5 tsp Baking powder
  • 1 tsp Baking soda
  • 0.5 tsp Salt
  • 2 large Eggs
  • 240 ml Whole milk
  • 120 ml Vegetable oil
  • 1 tsp Vanilla extract
  • 240 ml Hot water
  • 250 g Mascarpone cheese
  • 240 ml Heavy cream
  • 100 g Powdered sugar
  • 1 tsp Vanilla extract (for frosting)
  • 150 g Fresh strawberries
  • 150 g Fresh blueberries
  • 150 g Fresh raspberries
  • 50 g Dark chocolate (optional, for garnish)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and line two 8-inch round cake pans with parchment paper.

Step 2

In a large mixing bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

In another bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth.

Gradually add the wet ingredients to the dry ingredients, mixing until fully combined.
