Ingredients

  • 1 cup all-purpose flour
  • 0.75 cup granulated sugar
  • 0.25 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt
  • 1 large egg
  • 0.5 cup whole milk
  • 0.25 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 0.5 cup boiling water
  • 1 packet unflavored gelatin
  • 0.25 cup cold water
  • 2 cups heavy whipping cream
  • 0.5 cup powdered sugar
  • 0.75 cup semi-sweet chocolate chips
  • 1 cup fresh berries or chocolate shavings (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans, then set aside.

Step 2

In a large bowl, whisk together the flour, granulated sugar, cocoa powder, baking soda, baking powder, and salt.

Step 3

Add the egg, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until smooth. Stir in the boiling water last (the batter will be thin).

Step 4

Pour the batter evenly into the prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Step 5

Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

Step 6

While the cakes cool, dissolve the gelatin in 1/4 cup cold water and let it sit for 5 minutes.

Step 7

Heat the gelatin mixture in the microwave for 10-15 seconds until fully dissolved, then let it cool to room temperature.

Step 8

In a large bowl, use a hand or stand mixer to whip the heavy whipping cream until soft peaks form. Add the powdered sugar and dissolved gelatin and continue whipping until stiff peaks form.

Step 9

Once the cake layers are cooled, cut each layer horizontally to create four total layers. Place one layer on a serving plate and spread a generous portion of the whipped cream mixture on top.

Step 10

Sprinkle chocolate chips over the whipped cream layer, then repeat the process with the remaining layers, finishing with whipped cream on top.

Step 11

Garnish the torte with fresh berries or chocolate shavings, if desired.

Step 12

Chill the torte in the refrigerator for at least 1 hour before serving to allow the flavors to meld and the filling to set.
