Ingredients

  • 4 pieces Egg whites
  • 200 grams Granulated sugar
  • 2 tablespoons Unsweetened cocoa powder
  • 1 teaspoon Cornstarch
  • 1 teaspoon White vinegar
  • 300 milliliters Heavy cream
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Vanilla extract
  • 2 pieces Ripe bananas
  • 100 milliliters Chocolate sauce
  • 30 grams Dark chocolate shavings (optional)

Directions

Step 1

Preheat your oven to 120°C (250°F) and line a large baking sheet with parchment paper.

Step 2

In a completely clean and dry mixing bowl, beat the egg whites with an electric mixer on medium speed until soft peaks form.

Step 3

Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat the egg whites. Increase the mixer speed to high and beat until the mixture becomes thick, glossy, and forms stiff peaks.

Step 4

Sift the cocoa powder and cornstarch over the meringue mixture. Gently fold them in, along with the white vinegar, using a spatula. Take care not to deflate the meringue.

Step 5

Spoon the meringue onto the prepared baking sheet, creating 6 individual round nests, each roughly 8-10 cm in diameter. Make a small indentation in the center of each nest to hold the toppings later.

Step 6

Bake the pavlovas in the preheated oven for 90 minutes. After baking, turn off the oven and let the pavlovas cool completely inside the oven with the door slightly ajar. This helps prevent cracking.

Step 7

While the pavlovas are cooling, whip the heavy cream with the powdered sugar and vanilla extract until soft peaks form. Slice the bananas into thin rounds and set aside.

Step 8

To assemble, place a dollop of whipped cream onto each pavlova. Top with a few banana slices and drizzle generously with chocolate sauce. If desired, garnish with dark chocolate shavings for an extra touch of elegance.
