Ingredients

  • 1.5 cups all-purpose flour
  • 0.75 cups granulated sugar
  • 0.25 cups unsweetened cocoa powder
  • 1 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 3 large ripe bananas, mashed
  • 2 large eggs
  • 0.5 cups unsalted butter, melted and cooled
  • 1 teaspoons vanilla extract
  • 0.75 cups semi-sweet chocolate chips
  • 0.5 cups chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with muffin liners or lightly grease with cooking spray.

Step 2

In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until well combined.

Step 3

In another bowl, mash the bananas with a fork until smooth. Add the eggs, melted butter, and vanilla extract to the mashed bananas and mix until fully blended.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients and stir gently until just combined. Do not overmix; the batter should be slightly lumpy.

Step 5

Fold in the chocolate chips and nuts (if using) until evenly distributed throughout the batter.

Step 6

Divide the batter evenly among the 12 muffin cups, filling each about three-quarters full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean or with a few moist crumbs.

Step 8

Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days or freeze for longer storage.
