Ingredients

  • 240 ml Whole milk
  • 50 g Unsalted butter (melted)
  • 50 g Granulated sugar
  • 7 g Active dry yeast
  • 450 g All-purpose flour
  • 1 tsp Salt
  • 1 piece Egg (large, beaten)
  • 150 g Dark chocolate chips
  • 100 g Pistachios (shelled and roughly chopped)
  • 50 g Brown sugar
  • 0.5 tsp Cinnamon (optional)
  • 2 tbsp Milk (for brushing)

Directions

Step 1

In a small saucepan, warm the milk until lukewarm (about 37°C or 98°F). Remove from heat, add the melted butter and granulated sugar, and stir to combine. Sprinkle the yeast over the liquid and let it sit for 5-10 minutes until frothy.

Step 2

In a large mixing bowl, combine the flour and salt. Pour in the milk mixture and add the beaten egg. Mix everything together until a dough forms.

Step 3

Transfer the dough to a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. Alternatively, use a stand mixer with a dough hook for 5-7 minutes.

Step 4

Place the dough into a lightly greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1-2 hours, or until doubled in size.

Step 5

Once the dough has doubled, punch it down and roll it out on a floured surface into a rectangle approximately 30x40 cm (12x16 inches).

Step 6

Sprinkle the rolled-out dough evenly with dark chocolate chips, chopped pistachios, brown sugar, and cinnamon (if using). Gently press the toppings into the dough to help them stick.

Step 7

Starting from the longer side, tightly roll the dough into a log. Use a sharp knife to slice the log into 12 equal pieces.

Step 8

Place the slices, spiral side up, in a lightly greased or parchment-lined baking dish, leaving a little space between each for spreading.

Step 9

Cover the dish with a kitchen towel and let the buns rise again for 30-45 minutes, or until puffed and touching.

Step 10

Preheat the oven to 180°C (350°F). Brush the tops of the buns with milk, then bake for 20-25 minutes or until golden brown and cooked through.

Step 11

Remove from the oven and allow the buns to cool slightly before serving. Enjoy warm or at room temperature!
