Ingredients

  • 200 grams all-purpose flour
  • 50 grams unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 0.5 teaspoons salt
  • 150 grams granulated sugar
  • 100 grams unsalted butter (softened)
  • 2 large eggs
  • 200 grams mashed potatoes (plain, no salt or butter)
  • 100 milliliters milk
  • 1 orange zest of one orange
  • 50 milliliters orange juice
  • 100 grams dark chocolate (chopped or chips)
  • 0 powdered sugar (for dusting, optional)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease and line an 8-inch (20 cm) round cake tin with parchment paper.

Step 2

In a medium bowl, sift together the flour, cocoa powder, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to cream the butter and sugar together until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl as needed.

Step 5

Stir in the mashed potatoes, milk, orange zest, and orange juice. Mix until fully combined.

Step 6

Gradually fold the dry ingredients into the wet mixture using a spatula, being careful not to overmix.

Step 7

Gently fold in the chopped dark chocolate or chocolate chips until evenly dispersed throughout the batter.

Step 8

Pour the batter into the prepared cake tin and smooth the top with a spatula.

Step 9

Bake in the preheated oven for 35-40 minutes, or until a skewer inserted into the center comes out clean.

Step 10

Allow the cake to cool in the tin for 10 minutes before transferring it to a wire rack to cool completely.

Step 11

Once cooled, dust the top with powdered sugar for a decorative touch, if desired. Slice and serve!
