  • 1 teaspoon Ground coriander
  • 1 teaspoon Paprika
  • 2 tablespoons Cocoa powder (unsweetened)
  • 2 15-ounce cans Canned black beans, drained and rinsed
  • 1 15-ounce can Canned diced tomatoes
  • 2 cups Vegetable stock
  • 1 ounce Dark chocolate (70% cocoa or more), chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional, for garnish)
  • 4 wedges Lime wedges (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and sauté for 4-5 minutes, or until softened and slightly translucent.

Step 3

Stir in the minced garlic and diced red bell pepper, cooking for another 3 minutes until fragrant.

Step 4

Add the chipotle chilies, ground cumin, ground coriander, and paprika. Stir well to coat the vegetables in the spices.
