Ingredients

  • 1 cup Semisweet chocolate chips
  • 1 cup Peanut butter
  • 0.25 cup Powdered sugar
  • 2 tablespoons Coconut oil
  • 0.5 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

Prepare a 12-cup muffin tin by lining it with paper cupcake liners or silicone liners.

Step 2

In a microwave-safe bowl, combine the chocolate chips and 1 tablespoon of coconut oil. Microwave in 15- to 20-second increments, stirring after each interval, until the mixture is fully melted and smooth.

Step 3

Spoon about 1 to 2 teaspoons of the melted chocolate into the bottom of each muffin liner. Use the back of the spoon to spread it evenly. Place the muffin tin in the freezer for about 10 minutes to allow the chocolate layer to set.

Step 4

In another bowl, mix together the peanut butter, powdered sugar, vanilla extract, salt, and the remaining 1 tablespoon of coconut oil until well combined and smooth.
