Ingredients

  • 1 pound ground beef
  • 0.5 pound ground pork
  • 1 medium carrot
  • 1 medium zucchini
  • 1 cup baby spinach
  • 1 medium yellow onion
  • 3 cloves garlic cloves
  • 0.75 cup breadcrumbs
  • 0.25 cup milk
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 0.5 cup ketchup
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

Step 2

Finely dice the carrot, zucchini, yellow onion, and garlic. Heat the olive oil in a skillet over medium heat and sauté the vegetables (carrot, zucchini, onion, and garlic) for 5-6 minutes, or until softened. Add the baby spinach and cook for another 1-2 minutes, just until wilted. Set aside to cool slightly.

Step 3

In a small bowl, combine the breadcrumbs and milk. Let sit for 3 minutes to allow the breadcrumbs to absorb the milk.

In a large mixing bowl, combine the ground beef, ground pork, sautéed vegetables, breadcrumb mixture, egg, Worcestershire sauce, Italian seasoning, salt, and black pepper. Mix thoroughly with your hands or a spoon until all ingredients are evenly incorporated.
