Ingredients

  • 250 g chocolate ripple biscuits
  • 600 ml thickened cream
  • 1 tsp vanilla extract
  • 2 tbsp powdered sugar
  • 30 g dark chocolate (for garnish)
  • 100 g fresh berries (optional, for garnish)

Directions

Step 1

In a large mixing bowl, pour in the thickened cream, vanilla extract, and powdered sugar.

Step 2

Using an electric mixer, whip the cream mixture on medium speed until firm peaks form. Be careful not to overwhip.

Step 3

Spread a thin layer of whipped cream on a serving platter to create a base for the biscuits.

Step 4

Take one chocolate ripple biscuit and spread approximately 1 teaspoon of whipped cream on one side.

Step 5

Stand the biscuit upright on the serving platter with the cream side acting as glue. Repeat this process, spreading cream on one side of each biscuit and sandwiching them together to form a log shape.

Step 6

Once the log is assembled, use the remaining whipped cream to completely cover the outside of the biscuit log, creating a smooth and even layer.

Step 7

Cover the cake loosely with plastic wrap and refrigerate for at least 6 hours, preferably overnight, to allow the biscuits to soften and meld with the cream.

Step 8

Before serving, grate the dark chocolate over the top of the cake to garnish. Optionally, arrange fresh berries around the base or on top for added flavor and decoration.

Step 9

Use a sharp knife to slice the cake diagonally for serving, showcasing the striped pattern of biscuits and cream.
