Ingredients

  • 10 pieces Dried chipotle peppers
  • 2 cups Hot water
  • 2 tablespoons Olive oil
  • 1 medium White onion, finely chopped
  • 4 cloves Garlic cloves, minced
  • 3 tablespoons Tomato paste
  • 0.25 cup White vinegar
  • 1 tablespoon Brown sugar
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 0.25 teaspoon Ground cinnamon
  • 1 teaspoon Salt
  • 1.5 cups Water or vegetable stock
  • 1 piece Bay leaf

Directions

Step 1

Rinse the dried chipotle peppers under cold water to remove any dust or dirt.

Step 2

Place the peppers in a heatproof bowl and pour 2 cups of hot water over them. Cover and let them soak for 20 minutes, or until softened. Reserve 1 cup of the soaking liquid and set it aside.

Step 3

In a medium skillet or saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes, or until soft and translucent.

Step 4

Add the minced garlic and cook for another 1 minute, stirring frequently to avoid burning.

Stir in the tomato paste and cook for 2 minutes to enhance its flavor.

Add the softened chipotle peppers, reserved soaking liquid, white vinegar, brown sugar, ground cumin, dried oregano, ground cinnamon, and salt. Stir well to combine.
