Ingredients

  • 2 cups Raw pumpkin seeds (pepitas, freshly scooped or store-bought)
  • 2 tablespoons Olive oil
  • 1 teaspoon Chipotle powder
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Kosher salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper or a silicone baking mat.

Step 2

If using pumpkin seeds straight from a pumpkin, rinse them thoroughly to remove any stringy pumpkin flesh. Pat them dry with a clean kitchen towel or paper towels.

Step 3

In a large mixing bowl, combine the raw pumpkin seeds, olive oil, chipotle powder, smoked paprika, garlic powder, ground cumin, kosher salt, and ground black pepper. Toss until all the seeds are coated evenly with the spices.

Step 4

Spread the seasoned seeds in a single layer on the prepared baking sheet to ensure even toasting.

Step 5

Place the baking sheet in the preheated oven and bake for 12-15 minutes, stirring the seeds halfway through to prevent burning. Keep an eye on them; they should turn golden brown and emit a nutty aroma when they’re ready.

Step 6

Remove the seeds from the oven and let them cool completely on the baking sheet. They will crisp up further as they cool.

Step 7

Once cooled, transfer the toasted pumpkin seeds to an airtight container. Store at room temperature for up to one week.

Step 8

Enjoy as a snack, salad topping, or as a crunchy garnish for soups!
