Ingredients

  • 1 pound Ground beef
  • 1 tablespoon Olive oil
  • 1 can (7 ounces) Chipotle peppers in adobo sauce
  • 3 Garlic cloves
  • 1 medium Onion
  • 1 teaspoon Cumin
  • 1 teaspoon Oregano
  • 2 tablespoons Lime juice
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 Corn tortillas
  • 0.5 cup Fresh cilantro
  • 1 cup Diced tomatoes
  • 1 cup Shredded lettuce
  • 0.5 cup Queso fresco or feta cheese
  • 1 Avocado

Directions

Step 1

Finely chop the onion and mince the garlic. Set aside.

Step 2

Heat the olive oil in a large skillet over medium heat.

Step 3

Add chopped onion and sauté for about 5 minutes until translucent.

Step 4

Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Step 5

Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned, about 8-10 minutes.

Step 6

While the beef is cooking, finely chop the chipotle peppers from the can. You can adjust the amount according to your spice preference.

Step 7

Once the beef is browned, add the chopped chipotle peppers and 2 tablespoons of adobo sauce to the skillet.

Step 8

Stir in the cumin, oregano, lime juice, salt, and black pepper. Mix thoroughly and reduce the heat to low, simmering for an additional 5 minutes.

Step 9

Warm the corn tortillas either by placing them on a griddle for about 30 seconds on each side or by microwaving them wrapped in a damp paper towel for about 20 seconds.

Step 10

Fill each warm tortilla with a scoop of the chipotle beef mixture.

Step 11

Top with diced tomatoes, shredded lettuce, crumbled cheese, chopped fresh cilantro, and slices of avocado.

Step 12

Serve immediately and enjoy your spicy chipotle tacos!
