  • 1 cup Black beans, drained and rinsed
  • 1 cup Sweet corn kernels
  • 1 cup Cherry tomatoes, halved
  • 6 cups Mixed salad greens
  • 0.5 cup Red onion, thinly sliced
  • 1 large Avocado, sliced
  • 0.25 cup Fresh cilantro, chopped
  • 1 large Lime, juiced
  • 0.5 cup Sour cream
  • 0.5 cup Shredded cheddar cheese
  • 1 cup Tortilla chips, crushed

Directions

Step 1

In a small bowl, mix the chipotle peppers in adobo sauce, olive oil, ground cumin, and garlic powder to create a marinade.

Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure each piece is well-coated. Let it sit for at least 15 minutes.
