Ingredients

  • 1 lb ground beef or ground turkey
  • 1 small onion, finely diced
  • 3 garlic cloves, minced
  • 2 pcs chipotle peppers in adobo sauce, finely chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 0.5 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp tomato paste
  • 0.5 cup water or beef broth
  • 1 tbsp olive oil
  • 1 lime, juiced
  • 2 tbsp fresh cilantro, chopped (optional)

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Step 2

Add the diced onion and sauté for 3-4 minutes until soft and translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the ground beef or ground turkey to the skillet and cook, breaking it up with a spatula, until browned and fully cooked through. This should take about 6-8 minutes. Drain any excess fat, if needed.

Step 5

Stir in the chopped chipotle peppers, ground cumin, smoked paprika, chili powder, oregano, salt, and black pepper. Mix well to evenly coat the meat with the spices.

Step 6

Add the tomato paste and water (or beef broth). Stir to combine and bring to a simmer.

Step 7

Reduce the heat to low and let the mixture simmer for 5 minutes, allowing the flavors to meld and the liquid to reduce slightly.

Step 8

Squeeze the juice of one lime over the taco meat and stir. Taste and adjust seasoning if needed.

Step 9

Garnish with chopped cilantro, if desired, and serve warm with taco shells, tortillas, or over rice.
