Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium, diced yellow onion
  • 2 minced garlic cloves
  • 2 chopped chipotle peppers in adobo sauce
  • 2 tablespoons tomato paste
  • 0.5 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon brown sugar
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 pieces hamburger buns
  • 2 cups, shredded green cabbage
  • 1 medium, grated carrot
  • 0.25 thinly sliced red onion
  • 0.25 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • 0.25 teaspoon celery seeds
  • 0.25 teaspoon salt (for coleslaw)
  • 0.25 teaspoon black pepper (for coleslaw)

Directions

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Add diced onion and cook until soft, about 5 minutes. Stir in minced garlic and cook for an additional minute.

Step 3

Add ground beef to the skillet, breaking it up with a spoon, and cook until browned and fully cooked, about 7-8 minutes. Drain any excess fat.

Step 4

Reduce the heat to low and stir in the chopped chipotle peppers, tomato paste, and ketchup.

Step 5

Add Worcestershire sauce, apple cider vinegar, brown sugar, salt, and black pepper. Mix well and let simmer for 10 minutes, stirring occasionally, until the mixture thickens.

Step 6

While the sloppy joe filling cooks, prepare the coleslaw. In a large bowl, combine shredded cabbage, grated carrot, and sliced red onion.

Step 7

In a small bowl, whisk together mayonnaise, apple cider vinegar, honey, celery seeds, salt, and black pepper.

Step 8

Pour the dressing over the cabbage mixture and toss to coat evenly.

Step 9

Toast the hamburger buns lightly, if desired.

Step 10

Spoon a generous amount of the sloppy joe mixture onto the bottom half of each bun.

Step 11

Top with a scoop of coleslaw and place the top bun over it.

Step 12

Serve immediately and enjoy!
