Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 2 pieces Chipotle peppers in adobo sauce
  • 2 cloves Garlic, minced
  • 2 tbsp Olive oil
  • 8 pieces Corn tortillas
  • 1 cup Vegetable oil (for frying)
  • 2 cups Shredded lettuce
  • 1 cup Diced tomatoes
  • 1 large Avocado, sliced
  • 0.5 cup Sour cream
  • 1 tbsp Lime juice
  • 0.25 cup Cilantro, chopped (optional)
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

In a blender or food processor, combine the chipotle peppers, minced garlic, 1 tablespoon of olive oil, salt, and black pepper. Blend until a smooth paste forms.

Place the shrimp in a bowl and toss with the chipotle paste until evenly coated. Let marinate for 10 minutes.

While the shrimp is marinating, heat the vegetable oil in a skillet over medium-high heat. Once hot, fry the corn tortillas one at a time until crispy and golden, about 1 minute per side. Drain on paper towels and set aside.
