Ingredients

  • 6 pieces Dried chipotle peppers
  • 1 medium, finely sliced White onion
  • 4 cloves, peeled Garlic cloves
  • 3 tablespoons Vegetable oil
  • 2 tablespoons, grated Piloncillo (or dark brown sugar)
  • 2 tablespoons Apple cider vinegar
  • 1 cup Water
  • 1 teaspoon Salt

Directions

Step 1

Rinse the dried chipotle peppers under cold water to remove any dust or residue.

Step 2

In a pan over medium heat, add the chipotle peppers and lightly toast them for 1-2 minutes, being careful not to burn them. Remove the peppers from the pan and set aside.

Step 3

In the same pan, heat 2 tablespoons of vegetable oil over medium-low heat. Add the finely sliced onion and whole garlic cloves. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 10-12 minutes.

Step 4

Once the onions and garlic are caramelized, add the toasted chipotle peppers back to the pan. Pour in the water and bring the mixture to a gentle simmer. Let it cook for about 10 minutes or until the peppers are softened.

Transfer the mixture to a blender. Add the piloncillo (or dark brown sugar), apple cider vinegar, remaining 1 tablespoon of vegetable oil, and salt. Blend until smooth. If the mixture is too thick, add a tablespoon of water at a time until the desired consistency is reached.
