Ingredients

  • 1 head Romaine lettuce
  • 1 cup Cherry tomatoes
  • 0.5 medium Red onion
  • 1 large Avocado
  • 1 can Black beans
  • 1 cup Corn kernels
  • 1 tablespoon Chipotle peppers in adobo sauce
  • 0.5 cup Fresh cilantro
  • 1 large Lime
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and dry the Romaine lettuce. Chop it into bite-sized pieces and place it in a large salad bowl.

Step 2

Halve the cherry tomatoes and add them to the bowl.

Step 3

Thinly slice the red onion and add to the salad.

Step 4

Cut the avocado in half, remove the pit, and dice the flesh. Add it to the salad bowl.

Drain and rinse the black beans and add them to the salad.

Add the corn kernels to the bowl.
