  • 1 tsp Black pepper
  • 1 tsp Garlic powder
  • 2 tbsp Olive oil
  • 1 cup Raspberry preserves
  • 2 pcs Chipotle peppers in adobo sauce
  • 2 tbsp Apple cider vinegar
  • 2 tbsp Honey
  • 1 tsp Ground cumin
  • 0.25 cup Water
  • 0.5 cup Fresh raspberries (optional, for garnish)
  • 2 tbsp Fresh cilantro (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Pat the pork loin roast dry with paper towels and season it all over with salt, black pepper, and garlic powder.

Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Sear the pork roast on all sides until golden brown, about 3-4 minutes per side. Remove the pork and set it aside.
