Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1.5 cups whole milk
  • 0.5 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 2 tablespoons chipotle peppers in adobo sauce, finely chopped
  • 1 teaspoon cumin powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon salt
  • 2 tablespoons fresh cilantro, chopped

Directions

Step 1

In a medium-sized saucepan over medium heat, melt the unsalted butter.

Step 2

Once the butter is melted, add the all-purpose flour and whisk continuously for about 1-2 minutes until the mixture is smooth and slightly golden.

Step 3

Gradually pour in the whole milk and heavy cream, whisking constantly to prevent any lumps from forming, for about 3-4 minutes or until the mixture begins to thicken.

Step 4

Lower the heat to medium-low and add the sharp cheddar cheese and Monterey Jack cheese, stirring until the cheeses are completely melted and the sauce is smooth.

Step 5

Stir in the finely chopped chipotle peppers in adobo sauce along with cumin powder, garlic powder, onion powder, and salt. Mix until all the ingredients are well combined and the queso is heated through.

Step 6

Remove the saucepan from the heat and transfer the queso to a serving dish.

Step 7

Garnish with the freshly chopped cilantro before serving.

Step 8

Serve warm with tortilla chips, soft pretzels, or as a topping for tacos and nachos.
