  • 1 teaspoon black pepper

  • 4 units garlic cloves, minced
  • 3 units chipotle peppers in adobo sauce, chopped
  • 2 tablespoons adobo sauce (from the chipotle can)
  • 14 ounces diced tomatoes, canned
  • 4 cups chicken broth
  • 4 medium red potatoes, diced
  • 2 large carrots, sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 unit bay leaf
  • 1 cup fresh cilantro, chopped
  • 1 unit lime, juiced

Directions

Step 1

Trim any excess fat from the pork shoulder and cut it into 1-inch cubes. Season the pork cubes with salt and black pepper.

Step 2

In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium-high heat. Sear the pork cubes in batches until browned on all sides, about 4-5 minutes per batch. Remove the pork and set aside.

In the same pot, add the diced onion and sauté until softened, about 4-5 minutes. Add the minced garlic and cook for another 1 minute until fragrant.
