  • 2 tbsp Chipotle peppers in adobo sauce

  • 1 tsp Dried oregano
  • 1 tsp Smoked paprika
  • 2 tsp Kosher salt
  • 1 tsp Black pepper
  • 3 tbsp Olive oil
  • 2 tbsp Apple cider vinegar
  • 1 cup Chicken broth
  • 1 large Yellow onion, sliced
  • 0.25 cup Fresh cilantro (for garnish)
  • 2 whole Lime wedges (for serving)

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

In a small bowl, mix together the chipotle peppers, minced garlic, ground cumin, dried oregano, smoked paprika, kosher salt, black pepper, olive oil, and apple cider vinegar to form a paste.

Step 3

Rub the chipotle paste all over the pork shoulder, making sure to coat it evenly.

In a large Dutch oven or oven-safe pot, heat 1 tablespoon of olive oil over medium-high heat. Sear the pork shoulder on all sides until browned, about 2-3 minutes per side.
