Ingredients

  • 4 pieces Boneless, skinless chicken breasts (or thighs)
  • 3 whole peppers Chipotle peppers in adobo sauce
  • 2 tablespoons Adobo sauce (from chipotle can)
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves, minced
  • 1 tablespoon Honey
  • 2 tablespoons Fresh lime juice
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional for garnish)

Directions

Step 1

In a blender or food processor, combine the chipotle peppers, adobo sauce, olive oil, garlic, honey, lime juice, cumin, paprika, salt, and black pepper. Blend until smooth and well combined.

Step 2

Place the chicken breasts or thighs in a large resealable plastic bag or a shallow dish. Pour the chipotle marinade over the chicken, making sure each piece is fully coated.

Step 3

Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to infuse into the meat.

Step 4

When ready to cook, preheat your grill, oven, or stovetop skillet to medium-high heat.

Step 5

If grilling, cook the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C). If using an oven, preheat to 400°F (200°C) and bake for 20-25 minutes, or until fully cooked. For stovetop cooking, sear each side for 7-8 minutes in a lightly oiled skillet over medium heat.

Step 6

Once cooked, remove the chicken from the heat and let it rest for 5 minutes before serving.

Step 7

Optionally, garnish with freshly chopped cilantro. Serve the chicken as a main dish, or slice it and use in tacos, salads, or burritos.
